Joining a Squad: With the squad menu open, you should see all the squads, if there are any, available to join. Some squads will be private and require an invite to join them. However if the squad is public you just need to select the one you want to join and double tap it or select join.

You can play a ton of mods without a mic, you can still use chat to communicate. "Casual" modes like Wasteland, Altis life, and Koth, you probably will be fine with text chat.
You do not have to be always online. You can launch the game with Steam in offline mode. And restart your Steam client. Please note that you will not be able to play multiplayer while in offline mode.
