Turtle eggs can be unreliable. In Bedrock, drowned will leave the water to trample on turtle eggs.
Turtle eggs hatch only on sand, at night. So on servers if other people are awake, eggs can hatch while you're in bed, but if you're in singleplayer, nope.
Increase the Random Tick SpeedTo help speed up the hatching process, you can increase the random tick speed. The default random tick speed in Minecraft is 3.
Turtle eggs don't have a set time, they work based off of random game ticks. It can hatch almost instantly, or it can take a very long time. iirc, clusters of eggs take longer to hatch than single eggs. Use a silk touch pickaxe to pick up the eggs, and place them on individual blocks for hatching.

Leaving the NestThey are born with an embryonic egg sac which provides them with nutrition for those first few days until they are free of the nest and can find food. They normally wait until night to emerge from the nest to avoid many predators, and will leave in groups.
The best protection for a nest is to cover it with hardware cloth or chicken wire so that it can get rain and sun but raccoons cannot dig it up. If it was a slider, she may have laid a dozen or so eggs. A painted turtle would lay half as many. Snappers may lay more than 50 eggs.

Hatching the eggsOnce the eggs are laid, all players can do is wait. On average, it takes around four to five days for an egg to hatch, with the majority of eggs hatching within seven days. Players must stay within 128 blocks of the turtle eggs, or else the eggs will not progress towards hatching.
If you find turtle eggs in the water, unless they were just laid, they probably will not hatch but you can always try. In rare cases, a female turtle will not be able to lay her eggs. She may have too many. Her calcium may have been too low so that the eggs broke inside her.
